Carbon Steel in Knives: Advantages, Disadvantages, and Characteristics
Carbon steel is one of the classic materials for knife blades. Steels such as 1066, 1075 and 1095 are used for their combination of hardness, cutting properties and comparatively easy processing. The main disadvantage compared to stainless knife steels is their higher susceptibility to corrosion.
What is carbon steel?
Carbon steels contain carbon as an essential alloying element and comparatively small amounts of other alloying elements. Depending on the steel and heat treatment, different combinations of hardness, toughness and wear resistance are achieved.
Typical knife steels in this group include 1066, 1075 and 1095. Even low-alloy steels such as 5160 are often mentioned in connection with carbon steel knives, although this is an alloyed spring steel.
What are the advantages of carbon steel?
A major advantage of many low-alloy carbon steels is their comparatively low carbide content. As a result, they do not achieve the extreme wear resistance of high-alloy steels, but they can be sharpened well.
Toughness is also relevant when choosing a knife. Carbon and low-alloy steels can offer properties that are interesting for heavily used blades.
Why does carbon steel rust?
Unlike sufficiently chromium-alloyed stainless steels, carbon steel does not form a comparable protective passive layer. Moisture and oxygen can therefore lead to corrosion.
This does not mean that a carbon steel knife has to be particularly sensitive. Corrosion can be largely controlled with cleaning, drying and suitable care.
What knives is carbon steel suitable for?
Carbon steel is particularly interesting for knives where ease of sharpening, cutting performance and mechanical properties are more important than maximum corrosion resistance. Therefore, such steels are found in outdoor and bushcraft knives as well as traditional knives, among others.
For knives that frequently come into contact with water, food or salt water, a stainless steel may be more practical.
Is carbon steel worse than stainless steel?
No. The two steel groups focus on different aspects. A stainless steel reduces the maintenance effort, while a carbon steel can offer other properties depending on the alloy and heat treatment.
Which steel is more suitable therefore depends on the specific application.
