Kai Europe and chef Tim Mälzer are celebrating their 13-year partnership with 5555 examples of the Kai Shun Premier Tim Mälzer The Lucky 13. Each knife has its own number on the bolster. The 15 cm long blade has a very hard core of VG-MAX steel, surrounded by a 32-layer cladding of stainless Damascus steel. The knives are hardened to 61 ±1 HRC with a sharpening angle of 15 degrees. The handle is made of brown walnut wood, the total length of the Kai Shun Premier Tim Mälzer The Lucky 13 is 27 cm. This special blade shape is called Kiritsuke.
